Plain-old-Beets-'n-Coconut-Oil


Sometimes less is more. This is one of those times.

Ingredients:

4 Cubed Red Beets
4 Cubed Yellow Beets
3 tbs coconut Oil
Pink Himalayan Crystal Salt

Directions:
Boil Beets in hot water till they are cooked. Drain. Add Coconut Oil and Salt then Stir. Eat up till your heart desire<3

Today's Green Drink of Fantastic Awesomeness


I have made a commitment to myself to drink a green drink every day. It seems easier to me to follow a diet of addition rather than subtraction (Don't eat this, Don't eat that vs. Yes! Eat this! Yes! Eat that!)

The green drinks have gone through phases. Some have been documented here, some haven't. In the winter, i got really into adding cinnamon, banana and ginger to the drinks. Then they got sweet and I started adding nuts. But now, as spring approaches, I am wanting to drink something a little lighter and more vibrant. Today's drink was my response to that desire (plus it was all I had left in my fridge.)

Ingredients:

3 Stalks Celery
1/2 Small Yellow Beat
1 small Tomato
1 Bunch Parsley
1/2 Avocado
4 Tbs Lemon Juice (yipee!!!!!!)
Pink Himalayan Crystal Salt as desired
4 cups filtered Water

Directions:

Throw it all in the vita-mix and blend until smooth. Share!

Breakfast greens


I have been detoxing from caffeine for the past 5 days, which for me = exhausted. My solution is to big up on as much green power as possible. I eat these greens for breakfast with a couple eggs and they give me the energy boost that I would rather get from coffee.

Ingredients:

1 Bunch Chard
1 Bunch Collard Greens
2 Tbs. Coconut Oil
2 Tbs Apple Cider Vinegar

Directions:

Put it all in a big pot. Heat and Stir until it has shrunken down and is bright green. Try not to overcook it.
